Yirgachefe Coffee
Yirgachefe coffee is not only a trademark of the Gedeo zone, but also a world-renowned and representative of the Ethiopian coffee culture.
Yirgachefe coffee originates from Yirgachefe district and surrounding areas in the Gedeo zone of southern Ethiopia. It is known as a “Single-Origin” coffee in the world coffee market, and is very popular for its unique taste and purity.
- Location and Ecology
- Altitude: Yirgachefe coffee is grown at an altitude of 1,700 to 2,200 meters above sea level. This high altitude allows the coffee to ripen slowly, allowing it to retain a high level of sugar and flavor compounds.
- Variety: The coffee produced is primarily from ancient and diverse Ethiopian coffee plants (Heirloom Varieties).
- Growing System: Mostly grown under natural shade trees. Gideon’s signature Multi-story Coffee Forest system plays a major role in maintaining the quality of the coffee and being environmentally friendly.
- Flavor Profile/Characteristics
Yirgachefe coffee is primarily known for the following unique flavor profiles:
- Bright Acidity: Has a clean and bright citrus (lemon, orange) flavor.
- Floral Notes: Produces a pleasant floral aroma such as jasmine and lemon blossom.
- Tea-like Body: Has a light, clean and light body; gives a tea-like feel.

- Processing Methods
The two main processing methods that have made Yirgachefe famous worldwide are:
- Washed/Wet Process
After the beans are peeled, the beans are soaked in a water bath and cleaned. This process enhances the freshness, bright acidity, floral aroma and citrus flavor. Yirgachefe is most commonly known for this method.
- Natural/Dry Process
The beans are dried in the sun without being peeled. This process results in a strong fruity flavor (blueberry, winey notes) and a thick body.
- Economic and Cultural Benefits
- Economy: Yirgachefe coffee is one of Ethiopia’s primary sources of foreign exchange and a source of income for millions of local residents.
- Culture: Coffee is central to Ethiopian culture, and in the Gedeo Zone in particular, coffee brewing and processing are a part of life. The traditional coffee brewing ceremony called Buna K’ela is an integral part of daily life.
